Hotel Baraquda Pattaya – MGallery is proud to introduce its new Indian Chef – Chef Jeevan

 

Having completed his course in Chandigarh’s esteemed Food Craft Institution (FCI), Chef Jevan spent years in India mastering the art of North Indian & South Indian cuisine. He continued to hone his craft in many top restaurants in India, before he decided to seek another challenge in China. He spent 2 years there molding his professional abilities and broadening his palate, before deciding to make one more stop: Pattaya.

 

Chef Jeevan has been pleasing the palates of the people, in the Indian restaurants of Pattaya for over 7 years now. His unique cooking style has been impacted and enhanced by all the experiences along his journey. Over the years, he has been serving to big Indian groups in Pattaya, private small parties in Pattaya and to walk-ins who fancy a taste of his authentic innovative cuisine.

 

One of his specialties is North Indian food, which are usually thick, moderately spicy and creamy gravies. Dairy products like milk, cream, cottage cheese, ghee (clarified butter) and yoghurt play an important role in his cooking of both savory and sweet dishes. Thanks to the fact that Thailand has such a rich variety of fruit and vegetables at all times of the year, he produces a dazzling array of vegetarian dishes as well. From tandoori roti and naans, stuffed parathas and kulchas (bread made from fermented dough), to Mutter Paneer (cottage cheese and peas), Biryani, Pulaos, Daal Makhani, Rogan Josh, Butter Chicken, Chicken Tikka, Fish Amritsari, Samosas and more: Chef Jeevan knows it all.

 

If you fancy a less heavy platter and more towards the vegetarian spectrum, you can indulge in his South Indian dishes as well. With dishes centered on rice or rice-based dishes, he is able to make Sambaar (a soup-like lentil dish tempered with whole spices and chilies) and rasam (a hot-sour soup like lentil dish), dry and curried vegetables and meat dishes and a host of coconut-based chutneys and poppadums (deep-fried crispy lentil pancakes).

 

Aside from that he is well versed in Indian-Italian fusion food. His idea of fusing Indian ingredients with Italian cuisine is intriguing and all the more reason to try. From his own experiences of India’s rich, diverse cuisine, his love for Italian food paved way for some of his signature fusion dishes such as Paneer Cheese Ball, Paneer Bon Bon and Kofta with Macaroni to name a few. Introducing Italian flavors into Indian culture is a welcoming change for the locals in Pattaya.

 

Chef Jeevan is one of the few Indian chefs in Pattaya who is able to execute and innovate on both Southern Indian and Northern Indian dishes. He brings to the table the unique ability to combine his natural culinary flare with his love for adventure and innovation. As a result he is always looking to evolve the food, responding to new ingredients, techniques and influencing menus & dishes that are mindful of Indian tradition but are always evolving, adapting, changing to keep in step with the times.
